This F/A-18E/F Super Hornet from the Royal Australian Air Force leaving condensation trails behind. These condensation trails appear when the pressure is lower on top of the wings, and more so when the aircraft is pulling Gs. A pressure drop is accompanied by a temperature drop. If that temperature drop reduces the air temperature to below the dew point, the moisture in the air will condensate.

The equation PV=nRT, says that when the pressure (P) drops, then something on the other side has to drop also; the temperature (T) drops and this turns the invisible vapor into condensed water just like a cloud.
