This F/A-18E/F Super Hornet leaving condensation trails behind. These condensation trails appear when the pressure is lower on top of the wings, and more so when the aircraft is pulling Gs. A pressure drop is accompanied by a temperature drop. If that temperature drop reduces the air temperature to below the dew point, the moisture in the air will condensate.

The equation PV=nRT, says that when the pressure (P) drops, then something on the other side has to drop also; the temperature (T) drops and this turns the invisible vapor into condensed water just like a cloud.

Yes, nitrogen condensation. (aircraft emit nitrogen oxides, known as NOx, which contribute to the formation of ozone). Water vapor is less dense:)
