Air flow velocities are concurrently below, at, and above the speed of sound at the pressure and temperature of the airflow of the air vehicle's local environment (about mach 0.8–1.2).
The pressure is lower on top of the wings, and more so when the aircraft is pulling Gs. A pressure drop is accompanied by a temperature drop. If that temperature drop reduces the temperature of the air to below the dew point, the moisture in the air will condensate.
The equation PV=nRT, says that when the pressure (P) drops, then something on the other side has to drop also; the temperature (T) drops and this turns the invisible vapor into condensed water just like a cloud.
